Sriracha

Sriracha became a very popular sauce, the name comes from a town in Thailand as this is where it was invented. It is very easy to make and needs only a few ingredients.

Ingredients:

300gr mixed red chillies and bell peppers

4 garlic cloves

30gr sugar

1 tsp sea salt

2 tbsp vinegar (you can use white vinegar)

Method:

Blend all the ingredients (apart from vinegar) until you have a coarse paste. Transfer in a jar with a lid. This is an anaerobic fermentation process. Open the jar every day and stir the paste. It should be ready in 5-7 days.


When you think it’s ready put it in a blender with the vinegar, blend it well until it becomes a nice thin sauce. Store in a jar in the fridge. The vinegar is a preservative and will help it store for longer.
